Cucumber and Avocado Salad with Radish

Ingredients (4 persons):

  • 1 cucumber
  • 1 ripe avocado
  • 10 radishes
  • 500 g of cottage cheese
  • fresh dill
  • 1-2 cloves of garlic
  • Himalayan salt
  • freshly grounded black pepper

Directions:

  • wash the cucumber and cut it into long, thin slices with a sharp knife or mandolin
  • wash the radishes and cut them into thin slices
  • peel the ripe avocado, cut it in half and cut these into thin slices
  • peel the garlic and mash it to a smooth puree
  • chop the dill
  • mix the cottage cheese with the dill, garlic, salt and pepper
  • plate everything up by draping the thin, long cucumber slices, radish and avocado around small scoops of the cottage cheese mixture

Healthy food alternatives:

  • use zucchini instead of cucumber door zucchini
  • instead of fresh dill, use dried dill, fresh parsley or chiveuse Greek yoghurt instead of cottage cheese
