Ingredients:
- 200 grams of hemp meal (grounded by yourself or bought in the store)
- 200 gram almond meal
- 4 organic eggs
- 1½ teaspoon of baking soda
- 1 teaspoon of Himalayan salt*
- 2 tablespoons of extra virgin olive oil or extra virgin coconut oil
- 150 milliliters of coconut cream
- 4 tablespoons of sunflower seeds (soaked in water for at least 3-4 hours)
- 30 grams of coconut flour
- food processor
- baking tin
- baking paper
- oven
Directions:
- pre-heat your oven (150 º Celsius)
- mix all ingredients in your food processor until you get a smooth substance
- cover a baking tin with extra virgin olive oil or extra virgin coconut oil
- put a sheet of baking paper at the bottom of the baking tin
- put the dough in the baking tin and bake the gluten free almond cake for approximately 50 minutes
- if the cake is done, put it on a grid immediately and let if cool off completely
- keep the cake in a container in your refrigerator until use
Healthy food alternatives:
- use hazelnut mail instead of almond meal
- for extra flavor add raisins, dates or other types of dried fruit
- for extra flavor add spices like grounded cinnamon, cardamom, etc.
- use hemp milk or almond-, oat- or rice milk instead of coconut cream
* Instead of Himalayan Salt you can use unrefined sea salt. Never use “ordinary kitchen salt” or other types of refined salt!
